The Italians have brought many treasures to the culinary world.  One such gem is mascarpone cheese.

Mascarpone is the love child of cream cheese and whipped cream.  It’s light, yet rich, and oh so creamy.  If you want to stand by your open refrigerator and eat it by the spoonful, I’ll understand.  

Mascarpone is used in both savory and dessert applications.  

I use it in my strawberry mascarpone scones and in this pie, which is completely bonkers.
