Watermelon & Pecorino Romano Salad

We’re full into the swing of salad season.  Salads always taste better when it’s warm outside.

This particular salad is surprising.  Sweet watermelon meets peppery Pecorino Romano - it’s a good thing.  I like combining melon and cheese and calling it salad. 

This is one of those little gems I like to keep in my pocket and whip out at a moment’s notice.  It is a whole lot of refreshing with a dash of sophistication and it comes together in minutes.  No cooking, no kneading, no rolling out pastry.  Are you excited?  

Watermelon meets mint, and they get acquainted in the fridge.  Shaved Pecorino Romano gets sprinkled and black pepper makes an appearance.  Lastly, extra virgin olive oil is drizzled - I like a fruity olive oil for this salad. 

I cannot get over the combination of the Pecorino and the melon.  Just, so good...

Watermelon and Pecorino Romano Salad 

serves 4 

  • 2 cups watermelon, seeded and cut into squares (about 1/4 inch in thickness) 
  • 1/2 cup Pecorino Romano, shaved 
  • 2 teaspoons chiffonade mint 
  • freshly ground black pepper
  • extra virgin olive oil 

In a small bowl combine watermelon and mint, toss to combine.  Refrigerate for 30 minutes. 

Divide watermelon into four servings and divide shaved Pecorino between servings.  Drizzle with olive oil and top with freshly ground pepper.  

Serve immediately.  Enjoy!
