Roasted Strawberry-Lime Frozen Yogurt

There they sit, resting threateningly on the edge of optimal consumption and shriveled disappointment. 

Perhaps you were a little over-zealous.  Perhaps the rows of jewel-studded plants got the better of you.  Perhaps you had high hopes of preserving only to remember how much you really hate the process of canning. 

You picked until your shoulders were as pink as the berries in your basket, and you have the Instagram to prove it...but, now what?

Well hello there, frozen yogurt.  

Almost-overripe-strawberry disaster averted!

...and we did not even have to stand over a pot of menacingly hot jam.  #winning

This frozen yogurt is SO simple and it makes the perfect guilt-free summer treat! 

With minimal sugar and protein-packed yogurt, this fro-yo is basically like eating a salad, except way better because who ever heard of salad in a sugar cone? 

The most time-consuming part of this recipe is the roasting process, but I love roasting berries because it brings out all of those sweet, caramel-y notes that we all love so much. 

After some quality time in the oven, these berries will be soft, candy-like, and just perfect for pureeing into our yogurt. 

This is also an excellent way to put a pint of not-so-sweet berries to good use! 

Just look at that popping pink syrup! 

After the strawberries have had a chance to cool, they are added to the blender along with a bit of lime zest and fresh lime juice. 

Full fat greek yogurt is whipped in, and now we churn. 

Or, you know, you could just grab a straw...

If you are lover of soft serve (I most definitely am), you can grab a couple of spoons and dig right in. 

However, a couple of hours in the freezer will transform this frosty yogurt into a soft, but scoop-able treat. 

Quick, pink, and guilt-free - what could be better?

Roasted Strawberry-Lime Frozen Yogurt

makes 1.5 quarts

  • 6 cups fresh strawberries, hulled and halved 
  • 3/4 cup granulated sugar 
  • 1/4 cup freshly squeezed lime juice
  • 1 tablespoon lime zest 
  • 2 1/2 cups unsweetened full fat greek yogurt

Preheat oven to 400 degrees F. 

Line a large, high-sided baking sheet with parchment paper.  In a large bowl, combine halved strawberries and granulated sugar and toss to combine.  Spread the sugared strawberries evenly over the lined baking sheet.  Roast for 30 minutes; until soft and syrupy. 

Allow the strawberries to cool to room temperature, then pour the strawberries, along with the syrup into the base of your blender.  Add lime juice and zest and blend until smooth. 

Blend in yogurt and pulse until the mixture is very smooth and well combined. 

Pour the mixture into your ice cream maker and churn according to the manufacturer's instructions.  Transfer the frozen yogurt to a large, lidded, glass dish and place in the freezer.  Freeze for 2-3 hours; until solid.

Cook's Note: Frozen yogurt will last in the freezer for up to two weeks.
