I would like to take this moment to admit that Christmas has kind of sneaked up on me this year. It is true I began listening to my holiday playlist back in October, but I knew then that I had plenty of time before the season would actually begin. I continued thinking I had plenty of time until last week, when I realized Christmas was in a matter of days rather than weeks.
This time of year there is so much to be done. With all this obligatory merriment it is easy to get caught up in the rush and forget to enjoy the season.
Here is my gift to you. A recipe for a simple and quick sauce which magically combines two of the most wonderful things in this world - eggnog and caramel.
This sauce is a perfect holiday token that does not require waiting in long lines or collecting gift receipts. It also takes about ten minutes to create - you are so winning right now.
This is for your neighbor, your aunt, or the lonely person holding a bowl of unadorned vanilla ice cream.
“Here let me cover your entire bowl of ice cream with caramel sauce.”

Eggnog Caramel Sauce
makes about 3/4 cup
- 3/4 cup sugar
- 1 tablespoon water
- 1 tablespoon unsalted butter
- 1/2 teaspoon vanilla
- 5 oz eggnog
- 1/2 teaspoon freshly grated nutmeg
In a small saucepan combine sugar, butter and water. Place over medium heat and stir until the butter melts and the sugar begins to dissolve. Once the sugar has dissolved increase heat to medium high and boil for 5-7 minutes or until amber in color. Swirl the pan occasionally but DO NOT stir or scape down the sides. Once the color is correct remove from heat and add vanilla, nutmeg, and eggnog. Be careful! The caramel may splatter. Return the pan to the burner and stir until the caramel is smooth and homogenous. Refrigerate or serve immediately. Enjoy!
