Summer is breathing it’s last couple of breaths and beach towels are being replaced by binders and composition books. I’m looking forward to this next season with major excitement, but I’m also sad to think of saying goodbye to all the heirloom tomatoes and fresh basil I’ve been gorging on the last couple of weeks.

This week’s word is once again dealing with Fried Food. This is another one of my ruts. But, then again, if you have to be in a rut, battered-and-fried is a good place to be.
Fritters are the food that takes humble but healthy ingredients to new heights by dredging them and plunging them into hot oil, which happens to make everything taste like gold. Actually, gold doesn’t really taste good, but fried things do.
Fritters can be made sweet or savory. Fruits and vegetables are generally used, but even meats are sometimes employed as the star player.
The batter for fritters is normally very simple, usually employing flour, eggs and milk. Sometimes the batter is replaced by panko crumbs to form a crispier outer layer.
Fried - just get into it.
