Thinking. It is the true nemesis of sleep, and the culprit of so many cases of insomnia. I often do my best thinking during the various mid-night hours, but that doesn’t mean I want to. I would rather be sleeping; if only brains had an “off” button. Why is it that we go all day long without anything of true sense passing through our heads until the time when we wish to sleep and then our minds transform into a gushing stream of screaming ideas, plans, stresses, oooh chocolate covered almonds, emails to send, and why can’t you be in Paris right now. Ahh, I suppose this is simply life. Eventually you will fall asleep, you will wake up and you will make this ice cream. Peach ice cream is right, good, and proper. You need it, I need it, and anyone up at 2am experiencing a brain gush needs it.
Let us begin! Combine 1 cup of sugar and 1 cup of milk in a small saucepan and bring to a simmer. In a separate bowl, whisk 3 eggs, slowly pour half of hot mixture into the eggs while whisking constantly. Pour back into the saucepan and heat until temperature reads 170 degrees on a candy thermometer. Do not let mixture boil. When custard has reached the proper temperature, strain through a fine mesh strainer and set aside. In a separate bowl, stir together 2 cups of blanched and diced peaches and 2 cups half and half. Combine with custard and refrigerate for at least 6 hours. Prepare in ice cream machine according to manufacturers instructions. Enjoy!

makes about 1 quart
2 cups half and half

2 cups peaches (blanched and diced)

Pour back into the saucepan and heat until temperature reads 170 degrees on a candy thermometer. Do not let mixture boil. When custard has reached the proper temperature stain through a fine mesh strainer and set aside. In a separate bowl, stir together 2 cups of blanched and diced peaches with 2 cups half and half. Combine with custard and refrigerate for 6 hours or until very cold. Prepare in ice cream machine according to manufacturers instructions. Enjoy!
