It’s about time we started talking about fried dough. Good things start there.

Anything fried seems to end up on my food phobia list. I love everything about fried food minus the actual act of frying. Hot oil makes me nervous, and I end up smelling like a diner. Though the results are always well worth my effort I have to coax myself into filling the pot with oil and turning on the burner. Something like beignets require a little less self-coaxing than most fried foods.

Beignets are little puffs of fried, fluffy, happiness. Edible pillows on the edge of sweetness and covered in mounds of confectioner’s sugar.

Beignets could be compared to a donut, a really good, heaven-sent donut. I can’t describe how much I love this food.

The most famous beignets in America are to be found at Cafe Du Monde in New Orleans, Louisiana. Established in 1862, open 24 hours a day, they have been cranking out these French-style donuts for over 150 years.

Since I unfortunately can’t trek up to Louisiana every time I get a beignet craving (which is like, every single day) I’m working on conquering my phobia and making my own. I’ll hopefully be sending you a recipe soon!
