As I write this I sit before a desk stacked with un-read books and to-do lists. They try to beckon my attention. This is yet another instance when ice cream is most essential. Green tea ice cream to be specific. This is a creamy, soothing ice cream which makes to-do lists less daunting. Dessert; tis a powerful thing!
Another appealing quality of this ice cream is that it requires a mere four ingredients, all of which you should have on hand. We begin with 1 cup of half and half, 3/4 cup of sugar, and the zest of 1 lemon. Mix ingredients in a small saucepan and heat until all sugar is dissolved. Add 8 green tea bags to half and half mixture, cover and steep for 1 hour. Remove tea bags and add 2 additional cups of half and half. Let mixture chill for 8 hours or overnight. Meanwhile, combine the juice of one lemon and it’s zest, 1/2 cup of honey and 1/2 cup brown sugar in a small saucepan. Cook over medium heat until sugar is fully incorporated, save to serve over ice cream. When mixture is chilled prepare in ice cream maker according to manufacturers instructions. Enjoy!

Green Tea Ice Cream
yields: 1 quart
1 lemon zested
3 cups half and half (separated)
3/4 cup sugar
8 green tea bags
Combine 1 cup half and half with lemon zest and sugar in a small saucepan and cook over medium heat until sugar is dissolved. Remove from heat and add tea bags, allow to steep for 1 hour. Add remaining half and half and chill for 8 hours or overnight . Prepare in ice cream maker according to manufacturers instructions. Enjoy!

yields: about one cup
1/2 cup honey
1/2 brown sugar
1 lemon (zested and juiced)
Combine ingredients in a small saucepan. Cook over medium heat until sugar is fully incorporated. Serve over Green Tea Ice Cream. Enjoy!
